Roasted Vegetables

Last night for dinner we had delicious roast vegies - pumpkin, kumara, beetroot, carrot and capsicum, with red onion and garlic. I'm eating the leftovers for lunch today. I am a huge fan of roast garlic - cut the top off the bulb and roast the whole bulb, then squeeze out the cloves. We keep leftovers in the fridge which I often eat as a snack! I find it tastes sweet rather than extremely garlicky, and is quite nice cold. Everyone should try it!
